I've actually never stayed in a hostel in Scotland - I mean, I'm from Edinburgh, so whenever I visit these days I stay with friends or family. But I stayed in a hostel in Dublin the one time I went there, and we pre-booked. If you're only there for one night I wouldn't stress too much?
I'm sure you will! And the stuff you miss, well, it's just an excuse to come back ;)
